I would like to selfhost Google Fonts because of the GDPR:
Example article showing is not possible using it for Europe anymore: https://blog.runcloud.io/google-fonts-gdpr/
I can't find the place (file/folder) where the Google Fonts are called or a plugin that replace them.
Any ideas?

Please pay attention with the use of Google products, because some problems may occur.
